The place

A black metal-clad form among the vines of the Mornington Peninsula, near Melbourne. Inside, Carr's interiors run minimalist, almost futuristic — a vineyard retreat in Merricks North that keeps its edges sharp.

The 45 rooms and suites hold to jet black. Bespoke modern furniture, dark timber, a large private terrace, Tom Dixon bath products, a Bose speaker. Some rooms add a Japanese stone bath, the vines framed in the window.

The infinity pool sits above the rolling rows. For dinner, Doot Doot Doot serves Asian-inspired fine dining; Flaggerdoot, the Art Deco cocktail bar, keeps a vivid list.
