The place
Rabot Hotel belongs to Hotel Chocolat, the British luxury chocolate company, and sits 1,000 feet above sea level in a 140-acre rainforest estate — once the oldest cocoa farm in St Lucia. The architecture follows the old cocoa buildings: dark wood, pitched roofs, stone walls.
The 25 airy lodges keep to a minimal white-and-wood palette. Inside: a king-size four-poster bed, an open-sky rainforest shower, a Hotel Chocolat Velvetiser, free wifi. The Luxe Lodges add a private verandah with sun loungers and the Pitons filling the view.
The outdoor infinity pool holds that same uninterrupted view of the Pitons; a chilled cocktail and a wooden sunbed take care of the afternoon. The complimentary tree-to-bean experience traces the cacao bean from branch onward.
A restaurant and a bar complete the estate. Rabot Restaurant is open-air, its menu built around cocoa — pork tenderloin marinated in cacao beer, for one. The Cocoa Bar pours all day, cacao-infused drinks included.
