The place

Nobu Chicago fills a warehouse-style building in Fulton Market, where opulent modern design takes a traditional Japanese turn. Indigo runs through the interior like a signature.

The 115 guest rooms and suites play with material: exposed concrete ceilings, wool carpets, wooden floors, marble vanities. Bespoke bedding, Natura Bissé toiletries, yoga mats. Some rooms hold a Japanese-style wooden soaking tub.

There is a tranquil indoor pool, and a fitness center with machines and free weights. As for dinner, the restaurant is Nobu itself — black cod miso, rock shrimp tempura, contemporary Japanese cooking at the source.
