In Coburg, The Interlude occupies a section of Pentridge Prison, a bluestone institution 170 years old. The cells are now nineteen exclusive suites. The original bluestone walls remain; everything within them has softened — Dreamcatcher beds, black marble bathrooms, La Gaia Unedited on the shelf.
Below ground, a subterranean pool. Moody, striking, very quiet.
North & COMMON cooks to the local season. Olivine Wine Bar keeps a beautiful list, with a run of small plates alongside.
