In Hampton Bays, on the site of America's oldest inn — 1697 — Canoe Place Inn & Cottages carries a long memory lightly. Brooklyn studio Workstead led the revival, letting old and new speak in the same room. The 25 guest rooms keep to white and wood, vintage pieces set against subtle contemporary touches.

Good Ground Tavern holds three dining and drinking rooms, all working from seasonal American cooking and fresh local ingredients. The outdoor terrace is where the evening cocktail belongs.
