The place

Two hundred and thirty acres of Catskills green. Hemlock Neversink is a wellness retreat in Upstate New York, its 44 rooms and suites scattered across five buildings — green and earthy shades, handcrafted furniture, custom quilts, patterned carpets underfoot, upscale amenities kept quiet.

The grounds do the rest. An indoor pool and sundeck, a gym, tennis courts, hiking trails threading out from the door. The spa holds three barrel saunas, a steam room, a hot tub, treatment rooms. At Bittersweet, the al-fresco restaurant, the menu leans plant-forward and follows what the local season gives.
