Merida, Mexico
Rosas & Xocolate
The place
A colonial house in Merida, restored by architect Salvador Reyes Rios and his wife, its original structure intact and its walls painted a bright, unapologetic pink. The historic five-star hotel wears old and new lightly.
Seventeen rooms and suites, laid with handmade cement tiles, stucco walls, and touches of cedar. High ceilings, plush bedding, an outdoor bathtub. L'Occitane toiletries sit beside handmade chocolate soap; a Bose sound system, a TV, and free wifi round things out.
There is an outdoor pool with loungers, bikes on loan, laundry service, and a spa with a range of treatments. The award-winning Rosas y Xocolate Restaurant, led by chef David Segovia, is among the finest tables in the city — sophisticated, contemporary.
